Salt cured mackerel, if cured lightly, makes for a delicious snack or sandwich or as a part of an appetizer. Salted mackerel is also used as a flavouring ingredient, such as in the Chinese steamed chopped pork with salted fish. Use it as you would salted anchovies. It makes a particularly tasty flavouring for stir-fried Asian broccoli; flake the flesh of pan-fried salted mackerel and toss in with the greens.
