Maltose, or malt syrup, is a malt sugar used to bring a chewy sweetness to confectionary, or a moist glaze to meat dishes. The syrup is made in a similar process as glucose and fructose but with a corn rice and barley base.

Maltose is an all-natural sweetener originating in China. Even though maltose is less sweet than table sugar and fructose, it has long been used in hard candy and frozen desserts because of its unique tolerance to heat and cold.
