Cha-ohm is native to mainland Southeast Asia, is a well-loved herby vegetable among Thais, Cambodians and Laotians. The parts that are eaten are the ferny young leaf shoots and tender tips before the stems turn tough and thorny. It has a particular fragrance that may seem unpleasant at first to the unaccustomed, but when it’s cooked up, it’s so tasty that most people can’t stop eating it and the aroma is just part of the package and soon becomes quite likable.

Description

Cha-ohm is a good source of vitamin A to maintain healthy organ functioning. Calcium and phosphorus to protect bones and teeth. Vitamin C to strengthen the immune system, and iron to develop the protein hemoglobin to transport oxygen through the bloodstream. In Northern Thai cuisine Cha-om is also eaten raw with Thai salads, such as mango salad. In Central Thailand and Isan it is usually boiled or fried. Cha-om omelet pieces are one of the usual ingredients of Nam phrik pla thu and commonly used in Kaeng som, a sour Thai curry.
