Immature green papayas have a crisp white flesh with very subtle flavour. It is prized mostly for its crunch and used primarily as a base for salads, most notably in the Thai classic som tum, where it serves as a bland backdrop for the powerful flavours of chilli, lime, garlic, and fish sauce.
